Clean treats: Oatmeal Pumpkin Chocolate Chip Cookie

Just in time for the fall holidays! Pumpkin is abundant, so stock up and play around with your recipes. You can start here :)

Two words: You're welcome.

Ingredients:

- 1 cup pumpkin puree

- 1.5 tsp vanilla extract

- 1/4 cup pure maple syrup (or honey)

- 1.5 cup oats (I used Quaker)

- 2 tbs oat flour

- 1.2 tsp baking soda

- 1 tsp cinnamon

- 1/2 tsp pumpkin pie spice

- 1/4 cup chocolate chips

Directions:

Preheat oven to 325 degrees. Combine all ingredients, and stir until blended well. Place tablspoon-sized drops onto a parchment lined cookie sheet. Bake @ 325 for about 12-15 minutes (will vary depending on your oven). Makes 20 cookies.
